Vineyard location and characteristics
This wine is born in the best wine growing areas of the Buje region called Ferne’ and Contarini-Brazzania where a low yield per hectare allows for the production of extraordinary wines. The vineyards are laid out in an amphitheatre fashion, helping them to ideally utilize the local climate and the mineral-rich white soil.
Vinification and maturing
Fast process without maceration, soft pressing, fermentation at 12 – 14 °C. Ageing in steel tanks for at least 5 month, after that secondary fermentation (Liqueur de tirage) – classical method/refermentation in bottle for 1,5 – 2 year. Degorgement (Liqueur d’expedition): topping up with the same wine, no other supplements
Color/effervescence
Deap pink color, with glowing brilliance, dense mousse, the tiny bubbles rise up steady, enduring and generous strong>bouquet
The scent of ripe strawberries and then ripe cherries rises with the bubbles, and soon floral notes also flutter. After a while, a pleasant note of breadcrust and fresh brioche appears. The scents are harmonious and refined, but clear.
Palate
The first touch on the lips brings sharp minerality, freshness and citrus notes, but soon the taste balance brings the fruitiness of strawberries and blackberries. Lilith leaves us with a clean palate, and an interesting final taste of pomegranate. Refinement and clarity are again harmoniously paired.
Food pairing
This sparkling wine can be a seductive and refreshing aperitif, but it also goes fantastically well with fresh tuna, raw shrimp with strawberries, or with grilled red mullet. Likewise, it will be a nice accompaniment to young prosciutto.
