Vineyard location and characteristics

This wine is born in the best wine growing areas of the Buje region called Ferne’ and Contarini-Brazzania where a low yield per hectare allows for the production of extraordinary wines. The vineyards are laid out in an amphitheatre fashion, helping them to ideally utilize the local climate and the mineral-rich white soil.

Vinification and maturing

Fast process without maceration, soft pressing, fermentation at 12 – 14 °C. Ageing in steel tanks for at least 5 month, after that secondary fermentation (Liqueur de tirage) – classical method/refermentation in bottle for 1,5 – 2 year. Degorgement (Liqueur d’expedition): topping up with the same wine, no other supplements

Color/effervescence

Pale pink color, dense mousse, the tiny bubbles rise up steady, enduring and generous

Bouquet

Floral notes build the first impression, after the variegated spring flowers, soon we notice clear aromas of raspberry, those elegant and unobtrusive. Later on scent of blood orange comes up and with rising temperature even a slight hint of soft leather.

Palate

Brilliant pure aromas are paired into a fizzy freshness of this sparkling wine, they intriguingly reveal clear but at the same time elegant fruity aromas on the palate. This time we find scents of blood orange and traces of cherry.

Food pairing

This light spring aperitif will enchant your hearts, but Lilith is also a good companion to various seafood canapes, especially to smoked fish. It is a perfect match with raw oysters spiced with French vinaigrette dressing and fine onions, or with younger, softer prosciutto. Try it also with young, tender calamary in a pan.
