Vineyard location and characteristics
This wine is born in the best wine growing area of the Buje region called Contarini-Brazzania where a low yield per hectare allows for the production of extraordinary wines. The vineyards are laid out in an amphitheatre fashion, helping them to ideally utilize the local climate and the mineral-rich white soil.
Vinification and maturing
After destemming of grapes follow 20 days of fermentation in steel tanks at a temperature of 18-25 °C. After soft pressing follows slowly fermentation in steeltank until end of december, including the malo-lactic fermentation.Ageing for 4 years in diverse oak barrels (barrique, tonneaux, grand barrels) followed by more 2 years of unification of all the parts together in a steel tank.
Color
Ruby red color. Very dense wine leaves numerous tears on the chalice walls, which run down in several following series and different speed.
Bouquet
At the first smell, this wine immediately offers us the pure fruitiness of ripe cherries, on a carpet of leather and cedar wood aromas, then after a few turns in the glass, the scents of marzipan, griotte cherries in liqueur join. All aromas are dense, intense and speak of the maturity of this wine. Towards the end, we perceive hints of cinnamon and animal notes.
Taste
This is a powerful, dense wine, but also soft, round, warm, with moderate freshness. Pure fruitiness is repeated on the palate, reminding us of ripe blackberries, cherries and aronia juice, with a light peppery finish that lasts very long.
Gastronomic recommendation
Istrian cattle breed Boškarin is a serious bite and this strong wine goes perfectly with it, but it is also a pleasure to pair it with red meat under the baking lid, or with veal and game dished with wine sauces. Finally, try it with well mature cheeses.
