Vineyard location and characteristics

The Chardonnay is grown in the Region of Buje, on the hill above the Valley of Ferné. This location has an ideal micro climate for growing wines with a distinctive bouquet.

Vinification and maturing

Grapes first macerate for 6 hours in cool conditions, followed by crushing and settling of most for 24 hours. After first racking fermentation ongoing for one year partly in steel tanks, partly in oak barrells of diverse size. Periodically stirring of sediments.

Ageing 50 % in steel tanks and 50 % in oak barrels (barrique, tonneaux, large wood) for 2 years (last year uniting in steel tanks)

Color

Bouquet

The golden glass immediately provides fragrances of candied fruit, mature quince, further white pepper and dried orange peel. With each swing of the glass, layers of aromas come free – mature exotic fruit intertwine with vanilla and almonds. Luxurious fragrances are simultaneously elegant and announce a big wine.

Taste

First taste reveals rich and smooth wine, warm and fresh impressions are in balance. The soft tannins of well chosen oak barrel perfectly fit into the aromatic profile.

Dense taste of mature yellow fruit round up the harmonious expression and all bouquet aromas show up again on palate. Rich and tasty wine, that slides easily down the throat.

Gastronomic recommendation

This ripe chardonnay seeks for richer seasoned fish from oven, as baked sole with butter, some crabs in rich sauce, but also prawns in mayonnaise fit perfectly. Enjoy it aside of a baked chicken, turkey, or with white meat and pasta in cheese and creamy sauces. Try with mushrooms dishes or simply to softer middle aged cheeses.
