Vineyard location and characteristics

The position of Terre Rosse near the village of Petrovija in the vicinity of the city of Umag is home the Istrian red soil where two genetically very close, yet different varieties of Teran and Refosco are grown. Both varieties have a high percentage of acids and antioxidants, thus allowing for fresh, invigorating and long-lasting wines. A low yield is yet another guarantee for the quality of aromas and the long aging possibilities of these wines.

Vinification and maturing

Fast process without maceration, soft pressing, fermentation at 12 – 14 °C. Ageing in steel tanks for at least 5 month, after that secondary fermentation (Liqueur de tirage) – classical method/refermentation in bottle for 2,5 – 3 year. Degorgement (Liqueur d’expedition): topping up with the same wine, no other supplements.

Color/effervescence

The glass glows with transparent ruby red, mousse is very rich and persistent, bubbles are verry fine and the effervescence is verry durable

Bouquet

Fruity on first impression, strawberry and raspberry aromas persist fresh, clear and pure for a long time.

Palate

Barry sensations reoccur also on the palate, but this time is the composition of fresh and pure aromas sprinkled by lite hints of citrus. Those dry and fruity expressions are later accompanied by notes of dried rose petals.

Food pairing

Friends of a dry sparkling rosé will find here aa perfect aperitif, especially if you serve it along with ripe strawberries. Cold meat platters, prosciutto and dried rack, will be a fantastic company too. Taste it with pasta meals with fresh cheese and dried Istrian bacon, or with fine pork ham, baked in bread. An intriguing combination is surely an risotto with scrimps and pomegranate.
